Breakfast Casserole

This is one of those breakfasts that doesn't usually last as left-overs in my house.  The kids love it and request if for birthday breakfasts.  Saturday was one of those special days...its was Tava's birthday!
I actually found this picture from another day when she asked to make it.  On her birthday I let her sleep in to her heart's content and made it myself.  Although, she enjoys cooking with me so much it probably would've been something she WANTED to do on her birthday.  Hm...I'll have to remember that for next year.

Our princess turned 8 years old and since we are stuck at home during this stay-at-home order for COVID-19, the best we had to work with was anything already at home.  Luckily this dish requires items you usually have on hand anyway.  You can totally make it your own by adding your favorite veggies (mushrooms, spinach, bell peppers, etc.) and other breakfast items to make an all-in-one meal with as much ease and simplicity as it takes to eat the darn thing.

Breakfast Casserole
Prep Time: 15 min                                 Cook Time: 1 hour                                      Servings 12-16

Ingredients

  • 1/2 cup diced green onions
  • 2 Roma tomatoes diced
  • 1 package Lil'Smokies sausage, sliced
  • 2 cups shredded cheddar cheese
  • 12 eggs
  • 1 32oz package tater-tots
  • 1 cup milk
  • 1 tsp salt
  • 1 tsp pepper
  • Non-stick cooking spray
Directions
  1. Preheat oven to 350 degrees Fahrenheit
  2. Dice green onions, roma tomatoes and sausage, set aside.
  3. In a mixing bowl crack 12 eggs.
  4. Add milk, salt, pepper and whisk until fluffy then set aside.
  5. Coat 9x13 cake pan or casserole dish with nonstick cooking spray
  6. Arrange tater tots in an even layer on the bottom of pan.
  7. Sprinkle diced onions, tomatoes and sausage over tots.
  8. Sprinkle cheese evenly over veggies and sausage.
  9. Pour egg mixture over entire pan trying to coat all items.
  10. Cover with foil and bake 1 hour. 
  11. Remove foil cover for last 15 minutes and continue baking.
  12. Allow to cool 5 minutes after done.  Cut into even squares and serve with salsa or sour cream.
