Coconut Cranberry Apple Crisp

Sometimes, you can make the best recipes from whatever you've got lying around in the pantry. That's what happened today. I had a few pears, apples, coconut, cranberries and the basics for almost any baked dessert. Why not combine it all and finish off that vanilla ice cream? It was SOOO good! Coconut Cranberry Apple Crisp
Ingredients for filling
- 8-10 small apples peeled, cored & sliced thin
- juice of one lemon
- 1/2 cup dried cranberries
- 3/4 cup white sugar
- 1 tsp cinnamon
- 1 tablespoons flour
- 1/2 cup water
Ingredients for crisp topping
- 1 cup oatmeal
- 1 cup flour
- 1 cup packed brown sugar
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- pinch of salt
- 1/2 cup melted butter or margarine
- 1/2 cup toasted coconut
Directions
- Preheat oven to 350 degree Fahrenheit
- In medium size mixing bowl place apple slices inside
- Squeeze lemons juice over apple slices and mix well, this will keep them from oxidizing too much.
- In the same bowl add cranberries, white sugar, cinnamon, and 1 tablespoon of flour and mix well
- Pour water over everything and mix again.
- Empty contents of bowl into a baking dish such as a casserole dish or cake pan and set aside.
- In a separate bowl pour oatmeal, flour, brown sugar together and mix well
- Add baking powder, baking soda and pinch of salt to the mixture and stir again
- Pour melted butter into mixture and incorporate well until evenly distributed
- Spoon contents of crisp topping over apple filling smoothing out all around the dish.
- Sprinkle half cup of toasted coconut over the topping.
- Bake for 45 min-1 hour depending on baking dish (casserole dishes tend to take longer)
- Serve warm with vanilla ice cream.
