Make Ahead Breakfast Burritos
People ask how I cook/feed six kids. I bulk up a lot of our meals to make what we we do have stretch. This is one of the recipes I stretch. Breakfast burritos are a great way to meal prep and keep frozen for those times you and your family are on the morning go or just need something hot for breakfast. Wrap individually in parchment paper after assembly then stick them in the freezer for a later date. You can pop them in the microwave for 45-60 seconds and have a hot in seconds.

Prep Time: 25 minutes Cook Time: 20 minutes Yield: 24
Ingredients:
- 1 lb pork sausage
- 1 dozen eggs
- 1/2 cup of milk
- 8 oz grated cheese
- 1/2 bundle of green onions diced
- 1/2 bell pepper diced
- 2 roma tomatoes diced
- 24 fajita size tortillas
- 1 Tbsp butter or margarine
Directions:
- Wash all veggies, dice, then set aside
- Grate cheese and set aside
- Crack all eggs into mixing bowl
- Pour milk into eggs
- Whip egg and milk mixture until well blended and fluffy
- Heat large skillet to medium high
- Add 1 Tbsp of butter to warming skillet
- When hot, place pork sausage into skillet and cook until browned
- Add diced bell pepper and green onions, continue cooking until tender
- Pour in egg mixture then roma tomatoes
- Allow to cook for a few minutes before scrambling egg mixture with all other skillet ingredients
- Once everything is cooked, if there is still liquid in skillet, empty by using a collander/strainer
ASSEMBLY:
13. Lay out sheets of parchment paper along one side of table or counter
14. Place tortilla on each parchment paper sheet
15. Sprinkle cheese on top of each tortilla16. Top with breakfast burrito filling
17. Fold over one side of burrito and pull filling in fold with one motion
18. Fold open ends of burrito inward to prevent spillage
19. Roll burrito closed
20. Fold corner of parchment paper over burrito and roll twice, fold in ends then finish rolling
21. Store, open side down, in freezer until ready to reheat.
