First Timer: Chicken & Homestyle Waffles


When you have a good community of people in your life, you get a lot of love--and donations!  We are so blessed to have a great church family who always seems to keep us in their thoughts when they have a surplus.  Last night we got a surprise call from one of these special people who had a surplus of Chicken Express foods to give away.  We happily accepted.  We ate some last night and had more leftover today so I decided to try something I swore I would never do--eat chicken & waffles.

The idea of fried chicken on top of a favorite breakfast item just seemed very foreign, and wrong!  But when we get donations in quantity that we do sometimes, I try to add variety to our meals with what we're given so the kids don't get sick of the same thing time and time again.  I'm SOOOO happy I tried this.  

It. Was. Divine.

And after I posted a pic on facebook I had a friend who commented that you could actually make SAVORY WAFFLES!  WHAT?!?!  Do you know how many directions I want to take that?  For now, let's just start with this yummy homestyle waffle recipe (which a friend also requested I share).  

First, enlist a helper--or at least someone to entertain you while you cook.  Nifai always comes in at just the right time for both of these roles.  Go ahead and plug in your waffle iron so it can preheat.  I like to use the MEDIUM or LIGHT setting for waffles because sometimes I get busy and forget they're cooking😖 But if I have it on a lighter setting then it is less likely to burn while I'm busy forgetting about it.  He he he.

We doubled our recipe but I will just provide directions for for just 6-8 waffles for your convenience.
Start off with 2 eggs in a medium size mixing bowl.

Then "whip it, whip it good" until your eggs are nice and fluffy.

To your fluffy eggs you'll add 1 3/4 cups of milk.  But if you happen to make a mess, don't cry over spilled milk.  Just make a frowny face, wipe it up, and move on with your life man!


That's better!  Now all is right in the world again :)

Add 1/2 cup of vegetable  oil.


Then 1 teaspoon of vanilla (ignore, the dry ingredients in the picture for now)😑

NOW, add the dry ingredients by starting with 2 cups of flour.

2 Tablespoons of granulated sugar.

4 teaspoons of baking powder.

And 1/4 teaspoon of salt.

Finally, mix it all really well until it's semi thick and smooth.

Your young helpers/entertainers might need a lil' help with the mixin'.

So once you've got a good looking waffle batter, you're ready to pour it into your waffle iron.  Don't forget to spray it down with non-stick cooking spray.  I use about 1/3-1/2 cup of batter for my waffle iron.  I also like to use a ladle to pour it in.

And if you've done everything right (maybe after a few TRIAL waffles) you get a beautiful golden one like this!


Plate it, top it with your warm fried chicken and drizzle with maple syrup.  MMM, MMM, MMM!

HOMESTYLE WAFFLES

Ingredients:
  • 2 eggs 
  • 1 and 3/4 cups of milk
  • 1/2 cup of vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups of all-purpose flour
  • 2 Tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • Non-stick cooking spray

Directions: 
  1. Preheat your waffle iron 
  2. Beat eggs in a large mixing bowl until fluffy 
  3. Add other wet ingredients: milk, oil & vanilla. 
  4. Next add dry ingredients: flour, sugar, baking powder and salt
  5. Mix until semi thick and smooth 
  6. Spray your preheated waffle iron 
  7. Pour 1/3-1/2 cup of batter  onto hot waffle iron
  8. Cook until golden brown
  9. Top with hot fried chicken
  10. Drizzle with maple syrup.
